Hot to Trot Southern Pulled Chicken

Ingredients

Dry Rub
  • 3 tbsp light brown sugar
  • 1 tbsp salt
  • 1 tbsp ground cumin
  • 2 tbsp sweet paprika
  • 1 tbsp chili powder
  • 1 tbsp cracked pepper
  • 1.2 tsp cayenne pepper
Chicken Burgers
  • 2 kg bone in, skin on chicken thighs
  • 1 cup Hot to Trot
  • 6 brioche buns
  • Colelsaw mix or toppings of choice

Instructions

  1. Preheat barbecue to low
  2. Combine dry rub ingredients in a small bow, mix well and rub thin layer all over chicken
  3. When ready to cook, oil the barbecue rack and grill the chicken, skin side down, covered, until the skin has begun to blacken and the meat easily separates from the bone, about 1 hour.
  4. During the last 15 minutes, repeatedly turn and baste the chicken with a bit of the barbecue sauce.
  5. Remove the chicken from the grill and allow to rest until cool enough to handle.
  6. Remove and discard the skin. Pull the meat off the bones and shred it, discard any fat, placing the shredded chicken in a bowl.
  7. Add the remaining barbecue sauce to taste and serve warm on brioche buns.
  8. Add coleslaw or other toppings of choice.
